Secret Sausages, Mash & Onion

  • 2 packs SECRET SAUSAGES - any flavour.
  • 700g potatoes peeled and cut into similar sized pieces
  • 300ml vegetable stock made with 1/2 vegetable stock cube
  • 1 teaspoon vegetable oil
  • 1 onion, finely chopped
  • 1 tablespoon soft brown sugar
  • 100ml red wine
  • 1 teaspoon cornflour
  • salt and freshly ground black pepper
  1. Boil potatoes in salted water for approx 20 minutes, or until tender. (If you want a healthy and delicious alternative to plain mash add some suede and carrot).
  2. Meanwhile, to make the gravy, heat the vegetable oil in a small saucepan, add onion and soften for 4-5 minutes. Stir in the sugar and leave to caramelise for 1-2 minutes.
  3. Pour in the wine and cook for 1 minute. Stir in most of the stock except 2 tablespoons.
  4. Mix the remaining 2 tablespoons of stock with the cornflour, add to the wine sauce and bring back to a gentle simmer, stirring until thickened.
  5. Mash the potato with milk, season well and stir until smooth and creamy. Season to taste with salt and freshly ground black pepper.
  6. Grill/Fry the secret sausages per back of pack cooking instructions.
  7. Serve the sausages and mash on a plate and pour over the rich onion gravy.
